It’s possible to select colors in customizer. But when hovering over / touching the “publish” button, the changed color is set back to default value.

Is this because the theme has no rights for a specific folder on the server or is there an other reason?
I didn’t have this issue on my other website with this theme.

Try by temporarily disable all active plugins and checking if the color selectors work normally then.
