I’ve searched and tried everything I can to get post notification emails to not be sent from WordPress.com (but rather to show my website name instead). I even tried a couple of plug ins, but they didn’t change it either. I have other websites that don’t have that problem, but only with this one that is using Nirvana, so wondering if it might be something in the theme?

The theme does not handle emails or any other kind of notifications. You might get useful information if you ask this questions in the official WordPress.org forums.
