This has been driving me crazy the whole day… i found the “General > image post” option where i can choose “simple” and other things, but I can’t find a way to put my caption text over the image, in the middle of it. How can i do this?

Those options control how images and captions appear (as styled by the theme).

To add captions to content images you need to do that step when editing the content (post/page).
